Grease
thoroughly and sugar and 8-cup (2-liter) mould with a tube in the center.
Cream butter and sugar to blend. Beat in egg, molasses and orange rind.
Mix ground rolled oats, salt, soda, baking powder and spices well and add
to first mixture alternately with buttermilk or soured milk. Stir in
apples and raisins. Spoon into prepared mould. Cover tightly with aluminum
foil and set on rack in a large kettle. Add boiling water to halfway up
the side of the mould, cover the pan tightly and steam 90 minutes. Unmould
and serve hot cut in wedges.
Note: Grind
rolled oats through the fine blade of the food chopped or use the blender.
