Mix
together the flour, crumbs, carrot, ground almonds, cinnamon and
orange rind. Stir
in the orange juice, egg yolks, dried fruit and nuts and beat well. Whisk
the egg whites until stiff and fold them in. Turn
the mixture into a greased (900 ml) basin, cover with foil
or a cloth and tie. Steam
the pudding on a trivet over boiling water for 2 hours, topping up
with more water as needed. Turn
out the pudding and serve it hot. Soured
cream is specially good with it, though yoghurt is better for the
conscience.

Note :
The carrots and dried fruits provide so much sweetness that there's no
need for extra sugar. This is an
interesting alternative to Christmas pudding.
