What kind of chocolate should be used
when baking a chocolate cake ?
Dark chocolate, or semi-sweet is ideal
for cooking and decoration.
White chocolate contains cocoa butter,
milk and sugar and is normally enjoyed as an eating chocolate. It can
also be used for decoration purposes.
Cooking or compound chocolate is an
inexpensive form of cooking chocolate best used in baking.
For decoration purposes, use good
quality dark chocolate.
Melting cooking chocolate needs to
be done carefully.
Firstly, break the chocolate into
small pieces and place in a bowl. Put the bowl in a saucepan of
simmering warm water. Be careful that the water does not get into
the bowl.
Chocolate should not be boiled as
it will turn into lumps.
It only takes the chocolate a few
minutes to melt. Once ready, stir briskly and use as instructed in
your recipe.
You can also melt the chocolate in
the microwave on medium (70%) for about 2-3 minutes.
