What kind of chocolate should be used when baking a chocolate cake ?

  • Dark chocolate, or semi-sweet is ideal for cooking and decoration.
  • White chocolate contains cocoa butter, milk and sugar and is normally enjoyed as an eating chocolate. It can also be used for decoration purposes.
  • Cooking or compound chocolate is an inexpensive form of cooking chocolate best used in baking.
  • For decoration purposes, use good quality dark chocolate.

Melting cooking chocolate needs to be done carefully.

  • Firstly, break the chocolate into small pieces and place in a bowl. Put the bowl in a saucepan of simmering warm water. Be careful that the water does not get into the bowl.
  • Chocolate should not be boiled as it will turn into lumps.
  • It only takes the chocolate a few minutes to melt. Once ready, stir briskly and use as instructed in your recipe.
  • You can also melt the chocolate in the microwave on medium (70%) for about 2-3 minutes.
