This Italian toast is the workhorse of our kitchen.
Bruschetta is an Italian toasted bread brushed with
olive oil and then rubbed with garlic, perfect as a snack or to
accompany soups or salads for a light supper. You can also serve it with
any of the dips that follow.
It's the ideal way to use up stale bread,
from sourdough to rye to French baguettes (if they're not too hard).
Though note that it doesn't work with sliced white loaves out of a
plastic bag or any bread with added sugar.
