Apricot Strudel Recipes

Ingredients :

500g apricots (stoned and sliced)

425g of unsweetened apricot pieces

4 tbsp sultanas

2 tbsp slivered almonds

1 tsp cinnamon

1 tbsp brown sugar

Method :

Spread out 2 sheets of pastry on a kitchen bench. Brush lightly with milk. Place another 2 layers of pastry on top. Again brush with milk. Repeat for remaining two sheets of pastry. Sprinkle remaining ingredients over the pastry. Spray a baking tray with non-stick baking spray. Carefully roll up the pastry. Place on the baking tray, loose edge down. Brush the strudel well with milk. Bake for 25-30 minutes.

Serve warm, cut in thick slices. You may serve this with Creamy Whipped Topping. All the pleasure of the traditional strudel, but with a fraction of the fat.

Serves 4 - 6
