Banana Muffins Recipes

Ingredients :

2 very ripe bananas

1 egg

1/2 cup skim or low fat milk

1/2 cup unsweetened apple juice

1 cup wholemeal self raising flour

1 cup white self raising flour

1/2 tsp ground cinnamon

1/2 tsp baking powder

Method :

Mash bananas very well. There should be no lumps. Beat egg and add to banana. Add milk and apple juice. Sift flours, cinnamon and baking powder. Fold flours into liquid mixture. Mix well by hand. Spoon into very lightly greased muffin tins, filling each up by about two thirds. Bake for about 20 minutes until lightly browned and cooked through. Remove from oven, lift muffins out of this and cool on a cake rack.

Muffins for breakfast, muffins for school lunch, muffins as a snack (muffins full of carbohydrate and fiber).

Serves 4 - 6
