Buckwheat Pancakes Blueberry Sauce Recipes

Ingredients :

12 cup buckwheat flour

1/2 cup plain flour

2 tsp baking powder

1/2 tsp cinnamon

1 tbsp sugar

1 egg, beaten

3/4 cup low fat milk

1 quantity Blueberry Sauce

Method :

Sift flours, baking powder, and cinnamon into a mixing bowl. Return any husks to bowl. Add sugar and mix in well. Beat the eggs and milk together. Stir egg mixture slowly into the center of the flour mixture, bringing flour in from the sides as you mix, then beat well until there are no lumps. Heat frying pan, spraying with a little baking spray to prevent sticking. Spoon 2 tbsp mixture into pan, cooking 2 pancakes at a time. When bubbles appear on the surface, turn the pancakes and cook on the other side until golden brown. Keep warm until all pancakes are cooked. Serve with blueberry sauce spooned over.
