1/2 cup grated carrot, apple or cooked
pumpkin (or a mixture of two)
3 tbsp brandy
1/2 cup wholemeal flour
1 tsp ground cinnamon
1 tsp mixed spice
1/2 tsp nutmeg
2 tbsp margarine
11/2 slices wholemeal bread, crumbed
1 egg, lightly beaten
1/3 cup skim or low fat milk
1 tsp vanilla essence
2 tsp parisian essence
1 tbsp brown sugar or Sweetadin
1/2 tsp bicarbonate of soda
1 tbsp hot water
Method :
Soak dried
fruit, orange rind and carrot, apple or pumpkin in brandy overnight. Mix
flour and spices. Rub margarine into flour mixture, and add breadcrumbs.
Add egg, milk, fruit mixture, vanilla, parisian essence and sugar or
sweetener. Combine bicarbonate of soda and hot water and mix well with
other ingredients. Pour into a greased bowl, cover securely and steam
for 1 1/2 - 2 hours. Turn out and serve with Brandy Sauce.
This is
better if made a week before you want to serve it, so that the flavors
have time to mature.
