Creamy Rice Recipes

Ingredients :

1 cup uncooked basmati rice

1 1/2 cups water

2 1/2 cups skim or low fat milk

1/2 cup sultanas

1/2 tsp ground nutmeg

1 tsp vanilla essence

2 sachets of Equal or artificial sweetener equivalent to 4 tsp of sugar

Method :

Wash rice and place in saucepan, cover with the water, and simmer over very low heat until water is absorbed. Add 1 cup milk. Simmer again until absorbed. Add the remaining 1 1/2 cups milk and cook again until the milk is absorbed. Stir in sultanas, nutmeg, vanilla and sweetener (to taste). Serve warm with sliced stewed or fresh fruit.

To store - cover and refrigerator for up to three days.

Serves 4 - 6
