Ricotta Raisin Flan Recipes

Ingredients :

2 tbsp margarine

125g shredded wheat meal biscuits, crushed

500g ricotta cheese

4 tbsp apple concentrate

1 cup raisins, chopped

rind of 1 lemon, grated

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1 egg

1/2 cup low fat milk

ground cinnamon - garnish

Method :

Melt margarine, then pour into biscuit crumbs and mix. Spread over base and up sides of pie dish. Press well to make an even, firm crust. Bake 10 minutes. Cool. Mix ricotta, apple concentrate, raisins, lemon rind and spices. Beat egg and combine with milk. Mix it with other ingredients. Blend well. Pour into pie dish. Bake for 30-45 minutes until set and lightly browned. Sprinkle with a little cinnamon and serve.

Serves 4 - 6
