Doughnut Recipe

Ingredients :

600 g

60 g

120 g

1 tablespoon

sweet potatoes

flour

tapioca flour

granulated sugar

water

oil for deep frying

Method :
  1. Scrub the sweet potatoes well and boil them in their jackets.
  2. When tender, peel and mash them.
  3. Force through a sieve to remove fibers.
  4. Mix in the flours and knead together to get a firm dough.
  5. Add water if the sweet potatoes are too dry.
  6. Turn dough onto a floured board and roll into a long roll about 5 cm in diameter.
  7. Cut the roll into 12 equal slices and shape each slice into a round cake 1 cm thick.
  8. Make a hole in the center of each cake.
  9. Heat oil and fry the doughnuts until golden brown.
  10. Drain and keep aside.
  11. Strain the oil and put in sugar and 3 tablespoons water.
  12. Melt the sugar and boil until a very thick syrup is obtained.
  13. Return the doughnuts to the pan and toss them in the syrup until well coated and the sugar crystallizes.
  14. Serve either for breakfast or tea.
