Apricot Pie (tarte
alsacienne aux abricots) Recipe
Ingredients :
8 oz short crust pastry
1.5lb fresh apricots
5 oz castor sugar
2 oz flour
2 eggs
4 fl oz cream
Method :
Line a 10-in flan dish with the short
crust pastry. Wash and cut the apricots into halves and remove their
stones. Arrange them, touching each other, in circles round the dish and
sprinkle with 1 oz of the castor sugar. Mix the flour and the remaining
sugar in a bowl and work in the eggs. Then stir in the cream and pour
this custard over the apricots. Bake in a hot oven 220C, 425F, Gas 7 for
25-30 minutes. Serve cold.
