Caramelizing Recipe

Place 25g (1 oz) granulated sugar and 15ml (1 tbsp) water in a thick-bottomed pan over a low heat. Leave the syrup to boil until all the water has evaporated, without stirring or shaking the pan. Then stir while the sugar turns gold. Add 30 ml (2 tbsp) water, a spoonful at a time, and mix well over a high heat. Pour into the bowl or mould to be coated. Turn the bowl round and round until the inside is completely covered. Leave to cool.
