Confectioner's Custard (crème pâtissière) Recipe

Ingredients :

2 egg yolks

2.5oz castor sugar

2 tbsp flour

7 fl oz hot milk

Method :

Beat the egg yolks and sugar together, then add the flour and continue beating. Slowly pour in the hot milk, making sure it is well mixed with the eggs. Pour the custard into a saucepan and bring to the boil over a moderate heat. Continue cooking for a few minutes, stirring all the time. Remove from the heat and allow to cool before use.

Serves 4
