Grapefruit Snow (coupes d or aux pamplemousses) Recipe
Ingredients :
2 grapefruit
100g castor sugar
4 eggs
3 tbsp cream
grated rind of 1 lemon
Method :
Cut the grapefruit into halves and remove
the flesh without cutting through the skins. Reserve the skins in the
refrigerator until needed. Liquidize the flesh for a moment and strain
off the juice, discarding the pulp. Mix the juice with the sugar. egg
yolks, cream and grated lemon rind in a saucepan. Either cook gently
over a low heat, or in a bain-marie, stirring all the time, until the
mixture coats the back of a spoon. Do not boil. Allow to cool, then fold
in the egg whites, beaten stiffly, and fill the grapefruit skins with
this mixture. Leave in the refrigerator until required. Serve very cold
but not frozen stiff.
