Pears in Red Wine (poires au vin rouge) Recipe

Ingredients :

1lb small firm pears

10oz sugar

7 fl oz red wine, preferably Burgundy

1 clove pinch cinnamon and grated nutmeg

Method :

Peel the pears but leave whole with their stalks on. Put them in an enamel or non-stick saucepan with the rest of the ingredients, cover and simmer over a low heat for about 1 hour.

Turn the pears at intervals to ensure they are evenly cooked. Then arrange them in a bowl with their stalks upwards and pour the syrup over them. Serve cold.

Serves 4
