Ginger and Lychee Ice Blocks Recipes

  1. Combine 1/3 cup sugar and 1 cup water in a small saucepan.

  2. Bring to the boil and stir over medium heat until the sugar dissolves.

  3. Boil for 5 minutes, then remove from the heat and add 1 tbsp chopped fresh ginger.

  4. Set aside for 10 minutes.

  5. Strain into a bowl, add 1 tbsp lime juice, cover and chill until cold.

  6. Pour into 4 plastic ice block moulds and freeze for 1 hour.

  7. Add 6 seeded and chopped lychees, add the ice block sticks and freeze for 150-180 minutes, or until frozen solid.
