Preheat the
oven to 350F, Gas 4. Core the baking apples and score through the skins
around the middle with a small sharp knife. Place in a wide ovenproof
dish and spoon 15ml marmalade into the center of each. Cover and bake
for 35-40 minutes, or until tender.
Whisk the egg
whites in a large bowl until stiff enough to hold soft peaks. Whisk in
the sugar, then fold in the remaining marmalade. Spoon the meringue over
the apples, then return to the oven for 10-15 minutes, or until golden.
Serve hot. It is
important that the egg whites are stiff enough before you add the sugar
- you should be able to turn the bowl upside down and the egg whites
will stay put!
