Watermelon and Kiwi Fruit Ice Blocks Recipes

  1. Puree 300g seeded watermelon pieces in a food processor or blender until smooth.

  2. Sweeten to taste with 1-2 tsp caster sugar.

  3. Peel and slice 2 kiwi fruit and place the slices decoratively on the inside wall of six plastic ice block moulds.

  4. Pour the watermelon puree into the moulds and freeze for 30 minutes.

  5. Add the ice block sticks and freeze for a further 150-180 minutes, until frozen solid.

Makes 4-6

Make sure that there are no seeds left in the watermelon or there will be gritty bits in your ice blocks.
