Method :
- Heat the oven to 180oC (350oF),
Gas 4.
- Dip the peaches in boiling water for a
few seconds, remove with a slotted spoon and skin them.
- Halve the peaches and remove the
stones.
- Mix the biscuit crumbs with the
almonds and orange rind and divide the mixture between the peaches,
sandwiching the halves together again.
- Secure with wooden cocktail sticks.
- Place the peaches in a shallow baking
dish which they just fit into, pour on the wine and orange juice and
bake for 15 minutes, basting occasionally.
- Heat the grill to high.
- Sprinkle the peaches with sugar to
cover and grill for about 2 minutes, until the sugar caramelizes.
- Serve hot.
Alternative Suggestion :
Crushed ginger biscuits can be used
instead of digestives. Orange or apple juice can replace the wine for
the sauce.
