Baked Peaches Recipe

Ingredients :

large peaches

digestive biscuits

ground almonds

sweet white wine

brown sugar

grated rind and juice 1 orange

Method :
  1. Heat the oven to 180oC (350oF), Gas 4.
  2. Dip the peaches in boiling water for a few seconds, remove with a slotted spoon and skin them.
  3. Halve the peaches and remove the stones.
  4. Mix the biscuit crumbs with the almonds and orange rind and divide the mixture between the peaches, sandwiching the halves together again.
  5. Secure with wooden cocktail sticks.
  6. Place the peaches in a shallow baking dish which they just fit into, pour on the wine and orange juice and bake for 15 minutes, basting occasionally.
  7. Heat the grill to high.
  8. Sprinkle the peaches with sugar to cover and grill for about 2 minutes, until the sugar caramelizes.
  9. Serve hot.

Alternative Suggestion :

Crushed ginger biscuits can be used instead of digestives. Orange or apple juice can replace the wine for the sauce.
