Curried Melon Scoops Recipes

Ingredients :

1 ripe

275 ml

2 tablespoons

1 tablespoon

1 tablespoon

cantaloupe melon

plain low fat yoghurt

curry paste

mango sauce

orange juice

mint sprigs, to garnish

Method :
  1. Halve the melon, remove the seeds and scoop out the flesh, using a vegetable baller.

  2. Beat together the yoghurt, curry paste, sauce and orange juice.

  3. Toss the melon in the yoghurt sauce, cover and chill for at least 30 minutes.

  4. Garnish with the mint sprigs.

Serves 4
