Fruits of the Tropics Salad Recipes

Ingredients :

medium pineapple

guava halves in syrup

medium bananas, sliced

large mango, peeled, stoned and diced

stem ginger

ginger syrup

thick coconut milk

sugar

freshly grated nutmeg

ground cinnamon

strips of coconut, to decorate

Method :
  1. Peel, core and cube the pineapple, and place in a serving bowl.

  2. Drain the guavas, reserving the syrup, and chop.

  3. Add the guavas to the bowl with one of the bananas and the mango.

  4. Chop the stem ginger and add to the pineapple mixture.

  5. Pour 30ml of the ginger syrup, and the reserved guava syrup into a blender or food processor and add the other banana, the coconut milk and the sugar.

  6. Process to make a smooth, creamy puree.

  7. Pour the banana and coconut mixture over the fruit, add a little nutmeg and cinnamon.

  8. Serve chilled, decorated with strips of coconut.

Serves 4-6

Pineapple, guavas, bananas and mango are combined with ginger and coconut to make this exotic Caribbean dessert.
