Warmed Glace Icing Recipes

Ingredients :

360g

1 tbsp

4 tbsp

1 tsp

pure icing sugar, sifted

apple juice

water

white rum (optional)

food coloring

Method :
  1. Place icing sugar in a heatproof bowl.

  2. Mix liquids together and add gradually to icing sugar to form a smooth spreadable consistency.

  3. Place bowl over a dish of boiling water or heat over a pan of simmering water.

  4. When icing becomes soft and runny with a shiny appearance, remove from heat.

  5. To coat a cake: place cake on a cake rack cooler with the flat side placed underneath.

  6. Pour warm icing over cake, using a palette knife or spatula to guide it.

  7. Allow the excess to drip off.

  8. After icing starts to set, do not touch it until set.

Makes for 1 cake
