Carrot Halva Recipes

Ingredients :

600 g

carrots, peeled and grated finely


ground cardamom


hot water


dried milk powder

almond, blanched and slivered

sliver paper for garnishing

Method :
  1. Heat ghee in a heavy saucepan and add grated carrots.
  2. Cook uncovered over a medium heat, stirring constantly.
  3. Turn heat down to the minimum and allow the carrots to cook until soft and there is almost no more liquid.
  4. Make syrup.
  5. Boil sugar and water until sugar dissolves.
  6. Add syrup to carrots and stir in the cream and milk powder.
  7. Cook, stirring constantly, until the mixture is thick enough to come away from the sides, in one lump.
  8. Turn onto a greased dish and smooth the top.
  9. Decorate with slivered almonds and silver paper.
  10. Serve cut into small squares or diamond shapes.
