Method :
- Heat ghee in a heavy saucepan and
add grated carrots.
- Cook uncovered over a medium heat,
stirring constantly.
- Turn heat down to the minimum and
allow the carrots to cook until soft and there is almost no more
liquid.
- Make syrup.
- Boil sugar and water until sugar
dissolves.
- Add syrup to carrots and stir in
the cream and milk powder.
- Cook, stirring constantly, until
the mixture is thick enough to come away from the sides, in one
lump.
- Turn onto a greased dish and
smooth the top.
- Decorate with slivered almonds and
silver paper.
- Serve cut into small squares or
diamond shapes.
