Sift flours
and add salt in a large mixing bowl. Mix into a soft dough, adding warm
milk and a little water. Do not over-knead dough (2-3 minutes will be
fine). Set aside for 5-8 minutes covered. Divide the dough into balls of
30g each. Then roll out each ball on a floured surface. Cook on a griddle
on medium heat for 1-2 minutes. These breads do not bloat up but will puff
up a little when cooked. These breads are usually made and stacked up, and
covered with a tea towel. Best served with any spicy curry dish.
