Ingredients :

11/2 cups

4 tbsp

21/2 tsp

1 tsp

2 tbsp

1/2 cup

rice flour

chick pea flour

salt

cumin seeds

chili powder

ghee

thick coconut milk, from 1/2 grated coconut

oil for deep frying

Method :

Mix the rice and chick pea flour with all the other dry ingredients. Rub the ghee evenly into the flour and then add in enough coconut milk to from a soft dough. Heat oil and force the dough into the oil in circles using the special Murukku presser. Fry a few at a time on medium heat until golden brown and crisp, lift out and drain on absorbent paper. Serve warm or cool completely and store in an airtight container.

Serves 6 - 8

If Murukku presser is not available, use an icing bag with a star nozzle.
