Sift flours
into a large mixture bowl and add salt. Add water gradually to get a soft
dough. Knead well, and set aside, covered with a damp cloth for about 10
minutes. Divide the dough into small balls. Roll out each ball on a
floured surface. Heat oil until hot and drop in puri one at a time. They
should be puffed up and golden brown when cooked. Drain puri completely at
side of pan or place on kitchen paper before serving. Puri must always be
served piping hot, with a vegetable or meat curry.
Puri are simple
deep-fried breads, which are easy to make once the technique has been
mastered. Self-raising flour has been used to ensure definite success in
this recipe for beginners.
