Cheese and Potato Flan Recipes

Ingredients :

11/2 cups

rice flour

chick pea flour

salt

cumin seeds

chili powder

ghee

thick coconut milk, from 1/2 grated coconut

oil for deep frying

Method :
  1. Preheat the oven to 200C Gas Mark 6.
  2. On a lightly floured surface, roll out the pastry and use to line a 8.5 in flan tin.
  3. Bake blind for 10 minutes, remove the baking beans and paper and bake for a further 10-15 minutes.
  4. Meanwhile, melt the butter in a pan and sauté the celery and onion for 5 minutes.
  5. Add the flour and cook for 1 minute.
  6. Gradually stir in the milk, bring slowly to the boil, stirring, then simmer for 3 minutes.
  7. Remove the sauce from the heat and stir in the cheese.
  8. Season with salt and pepper, add the cooked potato and mix well.
  9. Place the mixture in the flan case, sprinkle the breadcrumbs over the top and bake for 15-20 minutes, until lightly browned on top.
  10. Serve hot or cold.

Serves 4-6
