Oatmeal Biscuits Recipes

Ingredients :

3 oz butter

2 oz caster sugar

2 tbsp golden syrup

1 egg, beaten

1 tsp vanilla essence

4 oz fine oatmeal

6 oz plain flour

1 tsp baking powder

1/2 tsp bicarbonate of soda

salt

Filling:

2 oz icing sugar

1 tsp cocoa powder

1 oz butter

Method :
  1. Preheat the oven to 180C Gas Mark 4, grease a baking sheet.
  2. Cream the butter, sugar and syrup.
  3. Add the egg and vanilla essence, then add the dry ingredients and mix well.
  4. Place small spoonfuls of mixture on the baking sheet and bake for 15-20 minutes, until lightly browned.
  5. Transfer to a wire rack to cool.
  6. To make the filling, sift the icing sugar and cocoa powder into a bowl and mix in the butter until it forms a soft mixture, adding a little warm water, if necessary.
  7. When the biscuits are cold, sandwich them together with the filling.
