Apricot and Passion fruit Jam Recipes

Ingredients :

500g dried apricots, halved

60ml fresh lemon juice

500ml water

880g caster sugar

125ml passionfruit pulp

Method :

Combine apricots, juice and the water in large glass microwave safe bowl; cook, uncovered, on high (100%) about 10 minutes or until jam jells when tested, stirring three times during cooking. Add passion fruit pulp; stand 2 minutes, stir jam to distribute seeds. Pour hot jam into hot sterilized jars; seal while hot.

Makes about 1.25 liters
