Dried Apricot Jam Recipes

Ingredients :

500g dried apricots, chopped coarsely

1.25 liters water

1kg sugar

60ml fresh lemon juice

Method :

Combine apricots and the water in large bowl; cover, stand overnight. Transfer apricot mixture with sugar and juice to large saucepan; stir over heat, without boiling, until sugar dissolves. Boil, uncovered, stirring occasionally, about 25 minutes or until jam jells when tested. Pour hot jam into hot sterilized jars; seal while hot.

Makes about 1.5 liters
