Place
strawberries in medium saucepan with sugar, rind, juice and reserved
strawberries from liqueur. Stir gently over heat, without boiling, until
sugar dissolves. Boil, uncovered, gently stirring, occasionally, about
10 minutes or until conserve sets to a spreading consistency when
tested. Pour hot conserve into hot sterilized jars; seal while hot.
Liqueur :
Combine strawberries in jar with sugar and gin; cover, stand 3 days.
Shake jar gently several times a day. Remove strawberries from liquid;
reserve strawberries. Liquid can be used as a dessert sauce or served as
a liqueur.
