Tomato Jam Recipes

Ingredients :

750g peeled

130g peeled grated coarsely

65g finely chopped glacé ginger

60ml fresh lemon juice

440g caster sugar

Method :

Coarsely chop tomatoes, combine with apple and ginger in large glass microwave safe bowl; cook, uncovered, on high (100%) about 15 minutes or until mixture is pulpy. Add juice and sugar; stir until sugar dissolves.

Cook, uncovered, on high (100%) about 20 minutes or until jam jells when tested, stirring three times during cooking. Pour hot jam into hot sterilized jars; seal while hot.

Makes about 1 liters
