Chilled Mint Tea Drink Recipes

Method :
  1. Put 2 cups (40g) mint leaves and 2 strips lemon peel (2cm x 5cm) in a bowl, and cover with 1 liter boiling water.

  2. Add 2 tbsp caster sugar and stir until dissolved.

  3. Infuse for 10 minutes.

  4. Strain through a sieve, then refrigerate.

  5. Serve chilled in a large jug with sprigs of mint and some ice cubes.

Serves 4-6
