Chocolate Mousse Recipe

Ingredients :

75g bitter dark chocolate, broken into pieces

25g plain dark chocolate, broken into pieces

25g butter

2 eggs, separated

1 tbsp ginger wine

150ml double cream

50g caster sugar

chopped crystallized ginger, to decorate

Method :
  1. Place the chocolate in a heatproof bowl with the butter.
  2. Stand the bowl over a pan of hot water and stir until the chocolate has melted.
  3. Allow to cool slightly.
  4. Whisk the egg yolks with the ginger wine until creamy.
  5. Whip the cream until thick.
  6. Stir the whisked egg yolk mixture into the melted chocolate, then fold in the whipped cream.
  7. Whisk the egg whites until thick and foamy.
  8. Add half the sugar and whisk until stiff.
  9. Finally, whisk in the remaining sugar.
  10. Fold into the chocolate mixture lightly but thoroughly.
  11. Spoon into stemmed sundae dishes and chill.
  12. Serve decorated with a little chopped crystallized ginger.
