Iced Chocolate Mousse with Whipped Cream Recipe

Ingredients : |
4 eggs, separated
125g caster sugar
125g plain dark chocolate, broke into
pieces
3 tbsp water
300ml double cream
To decorate:
8 tbsp double cream, whipped
grated chocolate |
Method :
- Whisk the egg yolks and sugar until
the mixture is thick and fluffy.
- Melt the chocolate with water over a
gently simmer water, remove from heat, cool.
- Whisk the chocolate into the egg yolk
mixture, whip the cream until it stand in soft peaks, fold into
chocolate mixture.
- Whisk the egg whites in a bowl until
stiff, fold 1 tbsp into the mousse, then fold in the remainder.
- Pour the chocolate mousse mixture into
8 individual dishes and chill.
- Ready to serve, decorate with whipped
cream and grated chocolate.
