Iced Chocolate Mousse with Whipped Cream Recipe

Ingredients :

4 eggs, separated

125g caster sugar

125g plain dark chocolate, broke into pieces

3 tbsp water

300ml double cream

To decorate:

8 tbsp double cream, whipped

grated chocolate

Method :
  1. Whisk the egg yolks and sugar until the mixture is thick and fluffy.
  2. Melt the chocolate with water over a gently simmer water, remove from heat, cool.
  3. Whisk the chocolate into the egg yolk mixture, whip the cream until it stand in soft peaks, fold into chocolate mixture.
  4. Whisk the egg whites in a bowl until stiff, fold 1 tbsp into the mousse, then fold in the remainder.
  5. Pour the chocolate mousse mixture into 8 individual dishes and chill.
  6. Ready to serve, decorate with whipped cream and grated chocolate.
