Mango Mousse Recipe

Ingredients :

2 mangoes

75g icing sugar, sifted

2 tbsp lime

2 tsp gelatine, soaked in 2 tbsp cold water

300ml double cream, whipped

lime, to decorate

Method :
  1. Cut the mangoes in half lengthways, scrape out the flesh and place in food processor.
  2. Add the icing sugar, lime and puree until smooth.
  3. Alternatively, work the mangoes through a sieve, stir in the juice and sugar.
  4. Heat the gelatine gently until dissolved.
  5. Cool slightly, mix the mango puree with the whipped cream.
  6. Pour into individual glass bowls and leave to set.
  7. To serve, decorate with lime or lemon twists.
