Mix together the flour and salt and
make a well in the centre. Break in the egg, pour on half of the
milk and beat well. Beat until the batter is smooth, then
stir in the remainder of the milk. Beat well and leave to stand for at
least 30 minutes. To make the filling, beat together the
cheese, dates and apple. Stir in the lemon rind and juice. To cook the pancakes, heat a heavy
based non stick frying pan, pour in a little of the batter and tip the
pan to cover the base. Cook over high heat until the pancake
bubbles. Toss over and cook the other side. Stack the pancakes and keep warm while
cooking the remainder. Divide the filling between the
pancakes and roll them up. Serve on a heated serving dish with
the lemon wedges.
Alternative Suggestion :
Other chopped, dried fruits can be used
in place of the dates - raisins, currants, candied peel or apricots are
good. And chopped banana can replace the apples.
