Sift flour
into medium bowl, gradually whisk in combined milks until smooth. Beat
egg white in small bowl with electric mixer until soft peaks form, fold
gently into batter. Pour 125ml of batter into heated non-stick pan which
has been coated with cooking oil spray; cook about 2 minutes or until
browned underneath.
Turn pancake,
brown other side. Repeat with remaining batter. You will need 4 pancakes
for this recipe. Serve pancakes with Golden Pears and syrup.
Golden Pears
- Place pears in medium pan with golden syrup, water and juice, bring to
boil; simmer, uncovered, until pears are just tender. Remove pears from
syrup; reserve syrup. Slice pears lengthways. Stir blended cornflour and
extra water into reserved syrup in pan, stir over heat until syrup boils
and thickens slightly.
