Sift flours
and spices into large bowl, stir in sugar. Gradually stir in egg and
enough milk to form a thick batter. Cover batter, refrigerate 30
minutes. Drop (60ml) of batter into heated heavy based pan which has
been coated with cooking oil spray.
Spread to
10cm round; cook about 2 minutes or until browned underneath. Turn
pancake, brown other side. Repeat with remaining batter. Place pancakes
onto plate; pour over hot Date Syrup.
Date Syrup -
Using vegetable peeler, peel strips of rind from half the lime, cut rind
into very thin strips. Combine sugar and water in medium pan, stir over
heat, without boiling, until sugar dissolves. Add lime rind, cardamom
and cinnamon. Bring to boil; simmer, uncovered, without stirring, 3
minutes. Add dates, simmer, uncovered, 3 minutes or until mixture is
thickened slightly. Discard cinnamon stick.
