Method :
- Soak the oatmeal in the water for
60 minutes.
- Mix in the flour, baking powder
and salt.
- Chop the sprouts finely and chop
the onion very finely.
- Add to the mixture with beaten
eggs and butter, beat well.
- Heat oil in a thick frying pan and
drop in spoonfuls of the mixture.
- Flatten slightly with the back of
spoon.
- Cook until golden brown on all
sides, ready to serve.
Serve these puffy little pancakes with
a crisp salad, and with some grilled bacon if liked.
