Bean Burritos Recipes

Ingredients :

4 whole wheat flour tortillas (lard free)

Bean Filling

1 1/2 cup soft cooked pinto beans, drained

1/2 cup tomato sauce

1/4 cup finely chopped bell pepper (red or green)

1 tsp chili powder

1/4 tsp garlic powder

1/4 tsp dried oregano

1/4 tsp ground cumin

several drops Tabasco sauce, to taste

Topping Options

lettuce

tomato

cilantro (fresh only)

black olives

scallions

tofu sour cream

onion

avocado

Method :
  1. Place all the filling ingredients in a medium saucepan and bring to a boil.

  2. Reduce heat to medium and simmer uncovered for 5 minutes, stirring occasionally.

  3. Remove the saucepan from the heat and mash the beans slightly with a fork or potato masher.

  4. Cover to keep warm and set aside.

  5. Warm the tortillas by placing one at a time in a dry skillet over medium heat.

  6. Warm for about 1 minute, or just until the tortilla is heated.

  7. Immediately remove the tortilla from the skillet, and lay it on a flat surface.

  8. Layer the tortillas one on top of the other after they are warmed.

  9. Cover the tortillas with a clean tea towel to lock in the heat while the remainder are warmed.

  10. Spoon 1/4 of the bean mixture onto each of the tortillas, placing it in a strip along one side, slightly off center.

  11. Add your favorite toppings, and roll the tortillas around the filling.

Makes 4 burritos, or about 2 to 4 servings
