Curried Tofu Salad Sandwiches Recipes

Ingredients :

1/2 cup egg and dairy free mayonnaise

3/4 to 1 tsp curry powder, or to taste

1 8-ounce can unsweetened crushed pineapple, drained

2 tbsp raisins

1/2 pound firm regular tofu, steamed or simmered in water for 10 minutes, then cooled, and cut into 1/4" cubes

4 slices whole grain bread (or 2 whole wheat pita breads, cut in half and spread apart to form 4 pockets)

1/2 cup leaf lettuce or romaine lettuce, sliced into thin strips

Method :
  1. Combine the mayonnaise and curry powder in a medium mixing bowl.

  2. Stir in the pineapple and raisins.

  3. Carefully fold in the tofu cubes, mixing them in gently but thoroughly.

  4. Spread the tofu mixture equally over two slices of the bread or stuff 1/4 of the mixture into each of the pita pockets.

  5. Top with lettuce and serve.

A quick lunch or light dinner that curry lovers will adore.

Makes 2 sandwiches
