Ingredients :

1 bunch

2 tablespoons

black rye bread, pumpernickel or crisp bread

low fat cottage cheese

oranges, thinly sliced into rings

mango, peeled, stoned and sliced

walnut halves

salad cress

kiwi fruits, peeled and thinly sliced into rings


pumpkin seeds

Method :

Have the toppings ready prepared and assemble just before serving. Spread each slice with the cottage cheese. On 4 slices arrange a pattern of orange slices and mango wedges and scatter with walnuts. Decorate with tiny bunches of cress. On the 4 remaining slices, arrange slices of kiwi fruits and watercress sprigs and scatter with pumpkin seeds.
