Sandwich Loaves Recipes

Ingredients :

15ml oil

115g minced beef

15ml horseradish sauce

5ml mustard

50g mangetout

1 leek, sliced

1 carrot, cut into strips

4 mini loaves

50g "no need to soak" dried apricots, chopped

salt and freshly ground black pepper

Method :
  1. Preheat the oven to 375F, Gas 5.
  2. Heat the oil in a large pan and fry the minced beef for around 5 minutes until brown and sealed.
  3. Add the horseradish sauce and mustard and season well to taste.
  4. Place the vegetables and apricots in a pan of lightly salted boiling water.
  5. Cook for 5 minutes and drain.
  6. Slice the tops from the loaves and reserve them.
  7. Scoop out the center of the loaves, leaving a 1.25cm shell.
  8. Layer the beef, vegetables and apricots into the loaves, packing the ingredients down well.
  9. Replace the lid, wrap in foil and cook for 35 minutes in the preheated oven.

An interesting variation on a hot sandwich, these individual loaves are a filling snack which may be prepared in advance.
