Sliced Seitan Sandwiches with Peppercorn Ranch Slaw Recipes

Ingredients :

Slaw

1 1/2 green cabbage, finely shredded

1/2 cup cucumber, finely diced (peel if waxed or thick skinned, and remove seeds if they are very large)

1 small carrot, pared and shredded

Peppercorn Ranch Dressing

1/4 cup egg and dairy free mayonnaise

1/2 tsp dried tarragon leaves

1/4 tsp dried dill weed

1/8 to 1/4 tsp coarsely ground black pepper (or to taste)

1/8 tsp onion powder

1/8 tsp garlic powder

1/2 cup seitan, drained, patted dry, and sliced into thin strips

2 whole wheat pita breads, cut in half and spread apart to form 4 pockets

Method :
  1. Combine the slaw vegetables in a large mixing bowl.

  2. Combine the next 6 ingredients in a small bowl or measuring cup to make the Peppercorn Ranch Dressing. Pour over the slaw vegetables, and toss gently until well combined. Add the sliced seitan, and toss again gently.

  3. Stuff each pita half with 1/4 of the seitan slaw mixture. Serve at once.

This sandwich is a vegetarian spin off of the Mediterranean gyro.

Makes 2 sandwiches, or 4 half sandwiches
