Italian Tuna Tomatoes Snack Recipes

large tomatoes

vegetable oil

small onion, chopped

clove garlic, crushed

fresh whole meal

bran

canned tuna fish, drained and flaked

can anchovies, finely chopped

chopped parsley

stuffed green olives

ground black pepper

Method :
  1. Heat the oven to 190oC (375oF), Gas 5.

  2. Grease a baking dish.

  3. Cut the tomatoes in halves crossways and scoop out most of the flesh, leaving firm 'walls'.

  4. Heat the oil in a pan and fry the onion and garlic over moderate heat for about 3 minutes, stirring once or twice.

  5. Remove from the heat and stir in the tomato flesh, bread crumbs, bran, tuna, anchovies and parsley.

  6. Finely chop 9 of the olives, add to the pan and season with pepper.

  7. Pack into the tomato halves and place in the baking dish.

  8. Bake for 10-15 minutes, or until the top is crisp and brown.

  9. Chop the remaining olives and scatter on top to garnish.

Serving suggestions :

Serve hot with whole meal rolls.
