Petite Lemon Souffles Recipes

Ingredients :

slightly beaten egg yolks

butter or margarine


grated lemon peel

lemon juice

egg whites


dash salt

Method :
  1. Combine the first 6 ingredients in small heavy saucepan.

  2. Cook over low heat, stirring constantly, till thick.

  3. Remove from heat and beat well, about 2 minutes; set aside.

  4. Beat egg white to soft peaks.

  5. Gradually add 2 tbsp sugar, beating to stiff peaks.

  6. Fold egg yolk mixture into whites till blended.

  7. Spoon into 2 individual soufflés dishes or two 10-ounce glass baking dishes.

  8. Place soufflé dishes in shallow baking dish; pour boiling water around dishes to depth of 1/2 inch.

  9. Bake in a moderate oven (350°) about 35 minutes or till tops spring back when lightly touched in center.

  10. Sprinkle tops lightly with sifted confectioners sugar.

  11. Serve immediately.
