Ingredients :

1/4 tsp

parsnips, peeled and chopped
butter, cut into small pieces
cream
ground nutmeg
egg
dried breadcrumbs
grated parmesan cheese
Cook parsnips in a large saucepan of boiling water until tender.
Drain and blend or process with the butter until smooth.
Stir in the cream, nutmeg and egg.
Spoon mixture into a greased ovenproof dish.
Sprinkle with breadcrumbs and parmesan cheese.
Bake at 180°C for 20 minutes or until top is golden and puffed.
