Souffleed Parsnips Recipes

Ingredients :


1/4 cup

1/4 tsp

2 tbsp

parsnips, peeled and chopped

butter, cut into small pieces


ground nutmeg


dried breadcrumbs

grated parmesan cheese

Method :
  1. Cook parsnips in a large saucepan of boiling water until tender.

  2. Drain and blend or process with the butter until smooth.

  3. Stir in the cream, nutmeg and egg.

  4. Spoon mixture into a greased ovenproof dish.

  5. Sprinkle with breadcrumbs and parmesan cheese.

  6. Bake at 180°C for 20 minutes or until top is golden and puffed.

Serves 4
