Kale with Winter Squash Recipes

Ingredients :

2 cups diced winter squash

1 bunch kale

1 tsp olive oil

1/2 cup thinly sliced red onion

2 cloves garlic, minced

1 tsp toasted sesame seeds

1 tbsp tamari soy sauce

Method :

Steam the winter squash until it is just tender. Wash the kale, remove the stems, and tear or cut the leaves into small pieces. Heat the oil in a large nonstick skillet and saute the onion and garlic for 5 minutes. Add the kale and cook, stirring frequently, until tender, about 5 minutes. Add the cooked winter squash, sesame seeds, and the soy sauce, and stir gently for 3-4 minutes.

A terrific dish for all seasons. It also contains some powerful antioxidants.

Serves 6
